Apple Cheddar Cookies
If you can tolerate the dairy - remember raw cheddar is usally the most well-tolerated dairy product - these are great nutrition and my kids love them. If you don't want to use almond flour (I use it for a protein boost) then just replace with regular whole wheat flour.
Apple Cheddar Cookies
1/2 cup butter
1/2 cup sugar
1 large egg
1 tsp vanilla
3/4 cup unbleached flour
3/4 cup whole wheat flour
1/4 cup almond flour
1/2 tsp baking soda
1/2 tsp cinnamon, ground
1/2 tsp salt
6 oz raw cheddar cheese, shredded
1 1/2 cup apples, cored, peeled, and chopped
Cream the butter and sugar until light and fluffy,
and then stir in the egg and vanilla. Add the combined
dry ingredients, blending well. Stir in the cheese,
apples and nuts. Drop rounded teaspoonfuls of the
dough onto an ungreased cookie sheet and bake at 375
degrees F. for 15 minutes. Remove from the cookie
sheet and cool on a wire rack or plate.
