Yam Fries & Dip

Jini's Yam Fries & Dip

2 large yams, washed and dried
3 tbsp. extra virgin olive oil or coconut oil
2 tsp. sea salt
1/2 tsp. paprika

Preheat oven to 350 degrees.

Cut the yams into 1/4 - 1/2 inch wide fries.

Toss with oil, salt and paprika.

Place on a lightly oiled cookie sheet (oiled with additional olive or coconut oil) and bake for 30 to 45 minutes, when fries are tender and beginning to brown.

Serve hot.


Dip

1/3 cup cold-pressed mayonnaise
1/8 tsp hungarian paprika (not spicy)
1/8 tsp sea salt
1/8 tsp dried cilantro
1/2 tsp powdered garlic

Mix all ingredients together well.

Serve with Yam Fries.
