This is more work than just cutting the squash in half and baking it, but it is truly delicious. Even my older son, who is no fan of squash, liked it.
Peel and cube one butternut squash. Toss in olive oil and salt lightly. (Use the oil to your tolerance. I use 1-1/2 tablespoons for this recipe, which easily serves 4.) Bake in a 9x13 pan at 400 degrees F for about 45 minutes, stirring the squash around in the pan every 15 minutes or so. Delicious!
As is often true with roasting vegetables, the high temps really bring out the sweetness in the squash.
